Ginger Amaretti Bark

1000g Peter’s® GibraltarTM Bittersweet Chocolate
200g Amaretti Cookies, Coarsely Chopped
200g Crystallized Ginger, Finely Sliced in Strips
  1. Blend chopped cookies with Peter’s Gibraltar bittersweet chocolate.
  2. Spread on parchment paper.
  3. Before chocolate hardens, press sliced ginger into the top of the bark.
  4. Score in 2 inch squares before bark fully hardens.
