Ginger Amaretti Bark

1000 g Peter’s® GibraltarTM Bittersweet Chocolate
200 g Amaretti Cookies, Coarsely Chopped
200 g Crystallized Ginger, Finely Sliced in Strips
  1. Blend chopped cookies with Peter’s® GibraltarTM bittersweet chocolate.
  2. Spread on parchment paper.
  3. Before chocolate hardens, press sliced ginger into the top of the bark.
  4. Score in 2 inch squares before bark fully hardens.
