Watermelon Fizz Truffles

Ganache Recipe
902 g   Peter's Original™ white chocolate
198 g   Coconut oil
    Red oil based food coloring (color to your liking)
    Oil soluble watermelon flavor (flavor to your liking)
 
Shell
454 g   Peter's Original™ white chocolate
50 g   Green cocoa butter
 
Bottom
454 g   Peter's Original™ white chocolate
100 g   Peter's® Finely Ground Burgundy® semisweet chocolate
    Red oil based food coloring (color to your liking to match the ganache)
 
Fizz Powder Recipe
30 g   Citric acid
45 g   Baking soda
60 g   Icing sugar

Coat mould with green cocoa butter (blot with paper towel to look like rind) prior to making shells. Temper Peter's Original™ white chocolate and make shells. Melt and temper additional Peter's Original™ white chocolate . Mix tempered white chocolate with 75 F coconut oil once oil is mixed in, add red oil based food coloring, fizz powder, and watermelon flavor as desired to ganache. Deposit the watermelon ganache into each shell and bottom with tempered Peter's Original™ white chocolate , colored to your liking. Prior to cooling, sprinkle Peter's® Finely Ground Burgundy® semisweet chocolate on top of the bottom to look like watermelon seeds. Cool and unmould.
