Ginger Amaretti Bark

1000 g   Peter's® Gibraltar bittersweet chocolate
200 g   Amaretti cookies, coarsely chopped
200 g   Crystallized ginger, finely sliced in strips

Blend chopped cookies with Peter's® Gibraltar bittersweet chocolate and spread on parchment paper. Before chocolate hardens, press sliced ginger into the top of the bark. Score in 2 inch squares before bark fully hardens.

Yield: 48 pieces
